if i start building a site with the beta version, will i be able to upgrade to the stable version?

Just update the updated files by comparing the revision you downloaded and the latest one with a tool such as kdiff3 (http://kdiff3.sourceforge.net/)  ;D

I think I should write an article one day on how we use kdiff3 to create patches and update our site.
Kdiff3 is a great tool.
