Is it possible to use rich snippets inside Elxis?

I dont know what "rich" snippets are but you can add anything you want via the editor in form of HTML text or via a special plugin.

The internet is not google. These are microdata, and yes, you can add anything via the editor. There are Elxis extensions like IOS Reservations (https://www.isopensource.com/software/ios-reservations-4-core.html) that insert microdata automaticallly.
